Mozzarella is an amazing well-rounded cheese, adding a refreshing taste to any salads, pizzas, delicious pastas and so many more foods. Originating from the south of Italy, near Naples, it can be made from almost any kind of milk, including cow, sheep, goat, and water buffalo. It rapidly became a cheese staple, being one of the most popular cheeses in Italy, and is a Traditional Specialties Guaranteed (TSG) certification in the EU, ensuring it will always follow traditional recipes. Today, it can be instantly recognized globally, and loved by most. Some ask however, how did this cheese phenomenon begin?
The first published record of Mozzarella dates to a 1570 cookbook written by Bartolomeo Scappi, with the name being derived from Mozzare, an Italian word meaning “to cut off”, but where did Bartolomeo find this delicious gem?
What may surprise many, as legend has it, mozzarella may have been made completely by mistake! As the legend goes, mozzarella was first discovered when fresh cheese curds accidentally fell into a pail of hot water near Naples. When removing the curds from the water, the rich water buffalo milk had developed a new consistency allowing it to be stretched and cut. Mozzarella remained unique to Italy for a long time as this cheese was made from a non-pasteurized milk, and there were little to no tools for refrigeration.
Though this legend is very difficult to confirm or deny, one thing is certain. Italy, we thank you for this gem of a cheese, whenever, or however it happened to be discovered!
