To age your cheddar apply the coating to one side of your cheese, allow to dry, then flip and do the other side. Then apply a second coating following the same method as the first coating. Ensure the entire cheese round is fully coated to avoid bacterial growth. For a medium-aged cheddar, age for 4-6 months. For an aged cheddar, age for 12+ months.
