Wax coating is used to properly age cheddar and prevent it from drying out.
How to use:
Heat the wax in a pot on the stove on medium heat until it reaches 80-90 degrees Celsius.
Make sure your cheese is cold before adding the wax (it helps to cool the wax more quickly and seal), you can do this by putting it in the freezer for 15 mins before waxing
Lay out parchment paper to rest the waxed cheese on
Choose to either dip your wheel in the melted wax directly or use the brush to paint it on. Or a combination of both. Be sure the wax has hardened a little before dipping it again.
Ideally, you would do 2 layers of wax to adequately seal in your cheese.
